M, m, m, m, m!

Per Belinda’s request, (Hi Belinda)  here’s my Bruschetta recipe:100_7900

6 roma tomatoes, chopped

3 cloves of fresh garlic, chopped

3 T. olive oil

2 T balsamic vinegar

1/4 c fresh basil, chopped (stems removed)

1/4 c finely chopped, sweet onion

1/4 t salt

1/4 t ground black pepper

Combine everything and enjoy.  Serve on sliced, toasted french baguette, topped with shredded mozzarella or on top of a burger…  It’s delicious!  Be warned, though, I’ve tried it with garlic powder and dried basil—it isn’t nearly as good as the fresh.

I love this stuff…and  we’re eating alot of it, since we have a *hit load of tomatoes right now!  lol  I think I’m going to explore the internet some today and try out some pico recipes too…  I’ll keep you posted, if I find a really, really good one.
